What meat are you having for Xmas dinner?
I've never been a fan of turkey so this year I'll be roasting a VERY well-matured rib of beef to go with roasted potatoes, Yorkshire pudding, red cabbage, honied parsnips and Brussel sprouts (well you have to, don't you) and other veg for the women who like that stuff.

And a gravy to die for.

Hello mate, you get an extra large chicken and debone, spread and lay flat with skin, then debone and remove skin of a medium turkey and spread lay flat placing the meat on top of the spread chicken. Then place stuffing, garlic, garnish as preferred spread on top. Bring the chicken with skin up from both sides forming a joint overlapping the chicken skin from both sides and secure with cocktail sticks all along joins. Tie up along length of joint with butchers twine to secure. Glaze with butter, garnish, leave to rest and marinate in fridge overnight.

Turkey must always go inside to keep moist and stop from drying out.

You can buy bird in a bird or bird in a bird in a bird, multi bird roast joints in various bird configurations. None taste like one made yourself. Some butchers will provide the service and charge, this is the nearest you will get, but home made is always best. Google provides more detail.

Got a ham joint in the slow cooker at the mo, cooking in ginger beer. Will do the glaze in the morning and then half an hour in the oven to finish it off

Won't be having a traditional Xmas meal.

However, I have found a Christmas Pudding amongst all the stuff I had shipped over here from Delft last year...and all that had been in store since 2006, when I went to go to Jakarta for work.

Doing it Grinch style...just me and the dog.

Breakfast.
Smoked salmon, scrambled eggs and brown toast, cut into triangles.

Lunch,
Prawn cocktail, gem lettuce and brown bread and butter, cut into triangles.

A whole Guinea Fowl, spuds in goose fat, carrots, pigs in blankets, 4 Yorkshire puds.


All of which would have been great, had I not just lost a filling...ironically, the one I had replaced last Xmas eve, but now i’m fucked till Tuesday.

This year turkey for Xmas and beef for New Year.

I have had Halibut on Xmas day in the past, makes a nice change to meat.
